2. it seems that you can only install one webapp / site, so for instance if i have 3 domains on a host, only one of them could have a site?
3. there is a bug when i try to access the config panel for my webapp in the yuno host admin, it crashes out (url: mytld.com//yunohost/admin/#/apps/my_webapp/config-panel )
Any thoughts on any of these?

1. It's only displayed for logged in users. Visitors won't see it. Not desired? There's a setting for that, check the forum.
2. Untrue. It's one app per domain if installed at the root of the domain.
3. Well "there is a bug" is not enough an answer. We need the log. Luckily for you, i know the issue. You can move without that config panel for the time being.
